This type of Thyme can still be found growing in the wold in the Mediterranean but it is far from easy to grow at a farm in the UAE. After a few failed attempts it seems that we finally succeeded with this trial batch. The leaves of wild Thyme are much smaller, skinnier and more dense then that of traditional Middle Eastern Thyme. It is packed with nutrients and makes a wonderful addition to any salad. When consumed raw Thyme has strong anti-septic and anti-fungal properties due to its high content of thymol. It contains higher anti-oxidant levels than any other herb including sea-xanthin, lutein, pigenin, naringenin and thymonin. Thyme is an excellent source of vitamin A, B6, C, E and K and minerals such as potassium, iron, calcium manganese, magnesium and selenium.
