Roquefort is a wonderful sheep blue milk cheese from the South of France. They are aged in the caves of Roquefort-sur-Soulzon. The cheese is white, tangy, crumply and slightly moist, with distinctive veins of blue mold. It has a characteristic odor and flavour with a notable taste and the blue veins provide a sharp tang. It has no rind and is slightly salty. Great with some freshly baked bread and salad.
